Make a Small Batch of Caramel Walnut Cookies in Your Air Fryer

Need cookies for the weekend? Okay, WANT cookies for the weekend? If the answer is yes, and you want a small batch that won't linger, tempting you, rev up your air fryer and get cooking. Caramel Walnut Cookies are a simple, old-fashioned-type cookie that's full of caramel flavor as well as the goodness of oats, walnuts, and butterscotch morsels. The cookies are a little crunchy, a little chewy on the edges, and a little cakey in the middle--something for everyone. Yes, the cookies are great with a glass of milk or cup of tea or coffee. The cookies also are at home next to a dish of ice cream. Don't want a dozen or so cookies? Just bake a few and stash the remainder of the dough in the refrigerator for later in the week. You'll have fresh, hot cookies another day.


Air Fryer Caramel Walnut Cookies with butterscotch morsels and oatmeal

Air Fryer Caramel Walnut Cookies -- Makes 12-15


2 tablespoons of butter, melted

2 tablespoons of canola oil

2 tablespoons of milk

1 large egg

1/2 teaspoon of caramel flavor/extract (optional)

1/2 teaspoon of vanilla

1/4 cup of sugar

1/4 cup of dark brown sugar

1 cup of flour

1/4 teaspoon of baking powder

1/4 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup of quick oats

1/4 cup of walnuts

1/4 cup of butterscotch morsels


In a medium bowl or measure (I use a Pyrex quart measure), combine the butter, oil, milk, egg, caramel flavor (if you're using it), vanilla, and both sugars. Mix them well, then add the flour, baking powder, baking soda, and salt, stirring them in at one time. Fold in the oats, walnuts, and butterscotch morsels. Cut pieces of baking parchment to fit your air fryer basket. Drop several 1 1/2 tablespoon mounds of dough on each piece of parchment, spacing the dough mounds at least an inch apart. Flatten the mounds slightly with your fingers (to about an inch or so thick). Place a dough-topped piece of parchment in your air fryer basket and cook the dough at 320 degrees for 8-10 minutes or until the cookies are puffed and golden brown. Remove the cookies from the air fryer basket, set them aside to cool, and repeat the cooking process with the remaining dough (or cook as many cookies as you want and stash the rest of the dough in the refrigerator).
