How to Make Cranberry-Persimmon Muffins in Your Air Fryer
This is a great recipe for using up that persimmon that ripened too quickly. The muffins are easy to mix up, reasonably nutritious, and filled with fall/winter flavors. The persimmon in the batter adds sweetness and moisture, and a handful of dried cranberries add a little chewiness and tang. These are "one-bowl" muffins, meaning you won't have lots of bowls to wash. The muffins mix up in minutes and cook in about 15 minutes in your air fryer. I like the muffins for breakfast with my fruit and yogurt. The muffins also are perfect for snacks, with dinner, or even for a "healthy" dessert. Enjoy!
