How to Make Carrot-Zucchini-Bran Breads in Your Air Fryer

The recipe I'm posting below makes four mini breads that are soft, moist, sweet, and loaded with fresh zucchini and carrots. The vegetables make breads "healthy"! Well, sort of. Mostly the vegetables add moisture and flavor to the breads. I also include raisin bran in the batter, which gives the bread a little more texture as well as beneficial fiber. Plus, using the raisin bran means I don't have to hunt up and add raisins separately to the batter. The breads are nicely spiced with a mixture of sweet spices. I use the food processor to grate the carrots and zucchini, which you can do ahead of time, if you'd like. Mixing up the batter takes minutes, and the breads air fry in about 20 minutes. The breads are great for breakfast and make a nice treat with tea, coffee, or a glass of milk. Enjoy!

Air Fryer Carrot-Zucchini-Bran Breads -- Makes 4 Mini Loaves


2 large eggs

2/3 cup of sugar

1/3 cup of dark brown sugar

1/2 cup of canola oil

1/2 cup of milk

1 cup of shredded carrot

1 cup of shredded zucchini

1 cup of raisin bran

1 1/4 cups of all-purpose flour

1/2 teaspoon of salt

2 teaspoons of baking powder

1 teaspoon of cinnamon

1/4 teaspoon of allspice

1/4 teaspoon of nutmeg

1/4 teaspoon of ginger

Sugar to sprinkle, optional


Spritz 4 mini loaf pans with non-stick cooking spray. In a large bowl whisk together well the eggs, sugars, oil, and milk. Stir in the shredded carrot and zucchini until blended. Add to the batter the flour, salt, baking powder, cinnamon, allspice, nutmeg, and ginger and stir them into the wet mixture until combined. Divide the batter equally among the prepared pans. Sprinkle a little sugar on top of each loaf, if you'd like. Put 2 or more filled pans in your air fryer basket (depending on the size of your air fryer), put the basket in the air fryer, and air fry the breads at 320 degrees for about 20 minutes. Remove the cooked loaves from the air fryer basket and repeat the cooking process with the remaining batter. Let the breads cool in their pans for 10-15 minutes before turning them out of the pans to cool completely.
