How to Make a Small Loaf of Sourdough Raisin Bread in Your Air Fryer--No Eggs or Butter Needed

This is a simple bread that's easy to make and very, very good. The bread also is great nutritionally, with white whole-wheat flour, flax seed meal, and canola oil instead of butter. Nonetheless, the bread isn't "weird," and it's a great, everyday bread for breakfast, snacks, and even alongside dinner. The bread is just a tad sweet, and plump golden raisins give it more flavor and sweetness. I especially like the bread because I can make it in my air fryer. The air fryer makes the crust of the bread crispy (but not hard), and the interior of the bread stays soft. Really, the bread is good! The recipe makes a small-medium sized loaf, which won't linger on your counter forever. Enjoy!

Air Fryer Sourdough Raisin Bread -- Make 1 Small/Medium Loaf

1 cup of sourdough starter/discard

1/4 cup of water

1 tablespoon of flax seed meal

1/4 cup of canola oil

1/4 cup of dark brown sugar

1/2 cup of white whole-wheat flour

In a large bowl mix all of the ingredients listed above well and loosely cover the bowl with plastic wrap. Let the mixture sit for at least an hour. Four to five hours is just fine, too. When you're ready, add to the mixture:

3/4 cup of all-purpose flour

3/4 teaspoon of salt

1/4 - 1/2 cup of golden raisins (or use dark raisins)

Mix/knead in the flour, salt, and raisins, then knead the dough for three to five minutes, adding an additional 1/4 - 1/2 cup of flour to prevent the dough from being too sticky to knead. Cut a piece of baking parchment to fit your air fryer basket. Roll the dough out into a long cylinder that's 10-12-inches long. Starting at one end, roll the dough up around the starting end to form a circle--like a snail. Put the dough on the prepared piece of baking parchment and spritz it with a little non-stick cooking spray. Cover the dough loosely with plastic and let it rise until it has increased in volume by about one-third. This takes a couple of hours in my cool kitchen. Gently put the dough on it's piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the bread at 320 degrees for about 30 minutes and until the bread is a deep golden brown (or until the internal temperature is about 190-200 degrees). Remove the bread from the air fryer to cool. The bread will slice well after it has completely cooled.
