This is an easy cake that lets you use up that squishy banana on your counter and create a simple and good dessert. You probably have all of the ingredients in your kitchen, as the recipe doesn't call for anything exotic. You will need a small (6 x 2-inches) round cake pan, but you can substitute a square pan, if that's what you have. The cake is lightly spiced and mildly sweet. A crumbly topping adds texture and a little more sweetness. I like to use pecans or walnuts on top of the cake, but you can omit the nuts if you'd like. Although the cake makes a nice dessert, it's also great for breakfast or with your tea or coffee. Enjoy!
Simple Banana Air Fryer Cake -- Makes a 6-inch Cake
1 large mashed banana
1 large egg
1/4 cup of dark brown sugar
1/8 teaspoon of cinnamon
1/8 teaspoon of nutmeg
1/4 cup of milk
1/8 teaspoon of salt
2 tablespoons of canola oil
3/4 cup of all-purpose flour
1 1/4 teaspoons of baking powder
1/2 cup of quick oats
Topping
2 tablespoons of melted butter
1/4 cup of quick oats
1/4 teaspoon of cinnamon
2 tablespoons of sugar
1/4 - 1/2 cup of pecans or walnuts (optional, but good)
Line a 6-inch round cake pan with aluminum foil and spritz the foil well with non-stick cooking spray. In a medium bowl mix together well the mashed banana, egg, brown sugar, cinnamon, nutmeg, milk, salt, and canola oil. Stir in the flour, baking powder, and oats until just mixed in. Scrape the mixture into the prepared cake pan. In the same bowl that you used for the cake batter, mix the butter with the oats, cinnamon, and sugar until crumbly. Sprinkle the crumbly mixture over the batter in the pan. Sprinkle the pecans or walnuts (if you're using them) on top of the crumbly mixture. Spritz the top of the nuts/crumbly mixture with non-stick cooking spray. Air fry the cake at 320 degrees for 25-30 minutes or until the cake is deep brown. Turn down the heat to 300 degrees and continue cooking the cake for another 10-15 minutes or until a pick inserted in the center of the cake comes out with no wet batter attached. Let the cake cool in its pan for about 15 minutes before loosening the foil and lifting the cake (with the foil) from the cake pan. Let the cake continue to cool for 5-10 minutes before loosening the foil from the sides of the cake.
