Air Fryer 15-Minute Salmon With Lemon-Honey Vinaigrette

If you have 15 minutes, you can have a great salmon dinner. You'll need only a few minutes to put together the lemon-honey vinaigrette and about 10 minutes to cook the salmon in your air fryer. You can make the vinaigrette ahead of time to streamline the preparation further (you'll have extra vinaigrette for serving or to dress a salad). I like to pour the vinaigrette over the salmon and let it sit for 15 minutes to an hour to help season the fish, but that's not necessary if you're in a hurry. The salmon will be good, regardless. The air fryer turns out salmon that is moist and nicely browned on top, and the lemon-honey combination works well with the rich tasting salmon. I often serve the salmon with broccoli and rice or potatoes (the photo shows the salmon with a potato cake), and the fish is also good on top of tender salad greens. Enjoy!


Air Fryer 15-Minute Salmon With Lemon-Honey Vinaigrette

Air Fryer Salmon With Lemon-Honey Vinaigrette -- Serves 2


Zest and juice of a medium lemon (about 1/4 cup of juice)

1/4 cup of olive oil

1 teaspoon of Dijon mustard

1 teaspoon of honey

Salt and pepper to taste

2 5-ounce salmon portions (10 ounces total)

1 tablespoon of plain or seasoned Panko bread crumbs


Spritz with non-stick cooking spray a small piece of aluminum foil that's large enough to fit in your air fryer basket and up the sides of the basket an inch or two. In a bowl or measuring cup whisk together well the lemon zest, juice, olive oil, Dijon, honey, and salt and pepper. Pat the salmon dry with a paper towel and lay it, skin side down, on the prepared aluminum foil. Tuck any thin end edges of fish under the main portion. Drizzle the fish with about half of the vinaigrette. Save the remainder of the vinaigrette to drizzle on the fish at serving time, if you'd like, or save the vinaigrette to dress salad greens. The vinaigrette will keep a few days in the refrigerator. Sprinkle the top of the salmon portions evenly with the bread crumbs and scoop up a little of the vinaigrette that ran off the fish and drizzle it over the bread crumbs. Put the fish on its foil into the air fryer basket, put the basket in the air fryer and air fry the salmon at 360 degrees for 10-13 minutes or until it flakes easily with a fork and is golden brown on top (if you like your fish a little less done, give it 8-10 minutes). You can remove the fish from the basket using the aluminum foil, if you'd like. Spoon the vinaigrette left on the foil over the fish when you serve it.
