Air Fryer Cookies: Coconut-Orange Biscotti


Okay, I just published recipe not too long ago, but I thought it's worth offering again. The cookies are that good. Plus, even though it's September, it's way too hot to turn on the big oven. The air fryer is a different story. In my quest to find out whether I can adapt various cookie recipes for the air fryer, I decided to test out "Arty the Air Fryer" on biscotti. Arty did well! If you can live with a small batch of biscotti, you're in business! In fact, I think the air fryer version of biscotti crisp up better and certainly faster than the oven-baked biscotti. The cookies I'm offering today--Coconut-Orange Biscotti--are crispy, crunchy, and mildly flavored with coconut and orange zest. The little cookies are great with a cup of tea or coffee or can happily accompany a bowl of ice cream or sherbet.

Air Fryer Cookies:  Coconut-Orange Biscotti

Coconut-Orange Biscotti -- Makes 15-18

1 egg

1/3 cup of sugar

3 tablespoons of canola oil

1/2 teaspoon of vanilla

1/4 teaspoon of coconut extract

Zest from 1 small orange or clementine (about 1 teaspoon)

1 cup of flour

1/4 teaspoon of baking powder

1/4 teaspoon of baking soda

1/8 teaspoon of salt

1/3 cup of flaked coconut

Cut three 6-7-inch squares of parchment paper and set them aside. In a medium bowl or Pyrex measure, whisk together the egg, sugar, oil, vanilla, coconut extract, and orange zest. Stir in the flour, baking powder, baking soda, salt, and coconut until blended. Drop an even portion of the dough on each of the squares of parchment paper. Dampen your hands with water and form the dough into small logs or cylinders on the parchment. Preheat the air fryer to 320 degrees for a couple of minutes and then carefully lower one of the dough log-topped parchment pieces into the air fryer. Cook the log for 10 minutes. Slide a large spatula under the parchment paper to remove the dough log from the air fryer. Let the log cool a few minutes, then slice it, crosswise, into 5- 6 pieces. Lay each piece flat on the parchment and return the parchment and pieces to the air fryer for 5 more minutes to crisp the biscotti. Repeat the process with the remaining dough logs. The biscotti may seem a little damp after only 5 minutes in the air fryer, but they'll crisp up as they stand.
